If you love bass fishing, it is a given that you also like it on your plate. You hope to go back home with your catch and go home and have it for dinner. Here is a sea bass recipe in Cuban style that will make you reach for second helpings at dinner.
To make ‘Cuban Style Sea Bass’ for two people you will need 4(6 ounce) sea bass fillets, 1 ½ cup thinly slices white onions, 2 tablespoons of minced garlic, 1 ½ cups of dry white wine, 2/3 cups of stuffed green olives, ¼ cup freshly chopped cilantro, 4 cups of seeded chopped plum tomatoes, ¼ cup drained capers, 1/8 teaspoon of red pepper flakes, 2 tablespoons of butter and 2 tablespoon of extra virgin olive oil.
Heat oil over medium heat in a large skillet and sauté the onions till they are soft. Stir in the garlic and sauté for around 1 minute, now add the tomatoes and cook till until they soften, Pour in the wine, and add olives, capers and red pepper flakes and heat till it simmers. Add the bass fillets gently in the sauce cover and cook for about 10-12 minutes. Transfer the fish on a serving plate and keep aside. Now increase the heat and add butter to the sauce and simmer till it thickens, stir in the cilantro and pour the sauce over the fish before serving. Your dinner is ready. This recipe is easy and quick and also appetizing.
